Blueberry Lemon-Frost Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup blueberry jam
  • 1 cup powdered sugar
  • 2 tbsp lemon juice
  • Blue sugar crystals for garnish

Directions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix into the wet ingredients.
  5. Scoop out small portions of dough, flatten into discs, and place a teaspoon of blueberry jam in the center of each. Fold the dough over and seal the edges.
  6. Bake for 12-15 minutes, until the edges are lightly golden. Cool completely on a wire rack.
  7. Whisk together the powdered sugar and lemon juice to make the frosting.
  8. Drizzle the lemon frosting over the cooled cookies and sprinkle with blue sugar crystals.
